Ground White Pepper is used in light colored dishes such as white sauces where black pepper would show as black specs in the foods. Excellent as a general replacement for pepper anywhere. Use on chicken, steaks, porks. White Pepper is from the same plant as black pepper ( Piper nigrum L.). The difference between White & Black Pepper is that for White Pepper the fruit is selected early for color and then soaked in water for some time to soften and remove the outer husks.
